Lyme Bay’s Bacchus 2021 is made from 100% Bacchus grapes, arguably the flagship variety for English still wines especially if you are looking for a 'similar' Sauvignon Blanc style wine from England.

Whilst it has Riesling in its lineage, most would say Bacchus expresses itself more similarly to Sauvignon Blanc, but with its own unique qualities. Thanks to England’s cool maritime climate and long growing season, Lyme Bay’s Bacchus shows fresh and bright acidity with a complex and pronounced delivery of citrus, gooseberry and minerality, plus English hedgerow character.

The 2021 Bacchus blend includes fruit from Essex, Kent and Hereford. Each parcel of fruit was fermented in individual lots at temperatures between 12 and 17 degrees centigrade with specially selected yeast strains.  Following fermentation, the wine was gently racked, then left to age on fine lees to improve structure and mouth-feel before being bottled. The wine was then allowed to settle and develop in-bottle before release.

TNWG Food Suggestion: I like to have fish with this one, especially grilled white fish on the BBQ. It's a lovely summery expression but having had the bottle ageing now carries more body, which also makes it a lovely balanced wine for a KFC bucket too! (Honestly, try it!)
