San Silverstro was established way back in 1871 and produces outstanding wines based in Piedmont. Mostly grown in the Langhe region, it is a four generational winemaking business. It is a 13.5% ABV red wine, 100% Nebbiolo from the sub region of Nebbiolo d’Alba. The vines are planted in marl clay and sand soils and this is known for imparting freshness and natural acidity. Fermentation takes place in stainless steel tanks between 28 and 30 degrees, standard for a red wine. However, afterwards it is macerated on skins for upto 10 days, to add colour, further flavours and tannin. It is aged in Slavonian oak casks, adding complexity and also rounding out the tannin structure within the wine.
Initially full of red fruit – ie red cherry, raspberry and violets alongside a subtle flower note of rose petal. The wine develops on the palate, and if left for longer this would continue to impart further leather, tar, tobacco tertiary notes to the wine.
TNWG Food Pairings: The Nebbiolo grape varietal is known for its high tannins and acidity, so therefore fatty meats are great with it, so think rib eye steak or lamb shank / lamb hotpot or for me, some bbq slow cooked pulled pork.
